COOK OF THE WEEK - HEALTHY EATING RECIPES

I hope everyone had a Blessed Christmas and celebrated New Year’s Eve sensibly! For those of you that have shared with me how much you are enjoying reading my “real people” articles, I apologize for my article today. These past two weeks have been so busy. I just didn’t want to take up anyone’s time asking for recipes and news about their family. With Christmas and New Years over, some of you have probably made some New Year’s resolutions. Perhaps one of those resolutions was “Eating Healthy in 2014.” If it was, then you will probably forgive me for not interviewing anyone and instead just finding some healthy recipes for you. As my friends already know, I love getting new recipes on Facebook, Pinterest, and even searching the internet. However, since I don’t have many people to cook for, some of my recipes never get tried. One of my healthy recipes I fix often is chili. This recipe, plus a few others, is below for your enjoyment today!

Two road projects set for Highway 3

Travelers on Highway 3 as well as local traffic in Humboldt, Wright and Pocahontas counties should prepare themselves for some delays this summer. There will be two major highway resurfacing projects on two stretches of the state highway. In Humboldt, beginning at the intersection with U.S. Highway 169, and continuing east through the city limits, there will be full depth patching of Portland Cement Concrete, with that work ending at Montana Avenue. From Montana Avenue east to 3rd St. NE in Clarion, there will be complete hot mix asphalt resurfacing of the highway. The work will include 13 miles in Humboldt County to the Wright County line at the intersection with Highway 17. The work will continue eastward through Goldfield and into the city of Clarion, encompassing 12 miles. The Humboldt/Wright resurfacing will not be the only Highway 3 project next summer.

LOIS ANN JOHNSON

It was obvious when I visited Lois Ann Johnson that she was a pet lover. On the wall was a big picture of her dog, Max, who was 9 years old when he passed away last year. And coming to the door with Lois Ann was Kobey, who she adopted from a friend last spring when Kobey was 10 years old. Kobey just quietly sat at our feet while we visited. Lois Ann also had a 15-year old cat, Scamp, who just passed away one month ago. I managed to get Lois Ann’s picture beside her picture of Max. That evening when I got home she had sent me a picture of Kobey, which I’m also including today. Lois Ann is a retired church secretary. She was married to her husband, Richard, for 46 years before he passed away in 2001. Lois Ann grew up in Ottumwa. She graduated from Cedar Falls College, which was at that time Iowa State Teachers College. After she and Richard were married they lived in the Waterloo and Cedar Falls areas for about 30 years.

No. 6 Humboldt wrestlers manhandle Hampton-Dumont, 56-18

The No. 6 ranked (Class 2) Humboldt wrestling team kept its unbeaten record intact by manhandling Hampton-Dumont, 56-18 in a North Central Conference dual at Hampton on Dec. 19.The Wildcats, now 12-0 overall and 4-0 in the NCC, recorded six pins and two major decisions to kept their perfect record going. Zane Russell (120), Austen Gargano (126), Jake Miller (132), Mike Madsen (145), Thaylan Bowman (152), Adam Mickelson (182) and Dakota Applegate (195) all recorded pins while Gus Arnold (160) and Reed Dreyer (220) won major decisions. Humboldt's No. 2 rated 285-pounder Dylan Hendricks lost a 4-2 overtime decision to No. 1 ranked Mario Pena.The Wildcats will be off until Jan. 9 when they travel to Webster City to take on the Lynx and Clear Lake in another key NCC double dual.See complete story and photos in the Humboldt Independent Newspaper. Humboldt wrestlers demolish Iowa Falls-Alden, 75-6

The Humboldt High wrestling team climbed to 12-0 on the season in duals by demolishing the Iowa Falls-Alden Cadets, 75-6 in a North Central Conference dual in the Humboldt gym on Dec. 17.The Wildcats got pins from Levi Sawyer at 113, Zane Russell at 120, Mike Madsen at 145, Thaylan Bowman at 152, Gus Arnold at 160, Adam Mickelson at 182, Dakota Applegate at 195 and Reed Dreyer at 220.
