COOK OF THE WEEK - BARB ADAMS

How many people out there LOVE to mow their yard? That is exactly the word Barb Adams used when she shared with me some of her activities and hobbies. She said, “I LOVE to mow my yard.” She also does her son’s yard out in the country. She loves being in the quiet of nature, she told me. Barb Adams started her life in Emerson NE, and graduated from Emerson-Hubbard High School. She met her late husband, John, while working at the Nebraska State Bank in South Sioux City, NE. She was the only single girl working there at the time when this new single guy was hired to also work at the same bank. All the employees kept trying to get them together but Barb says, “I ignored him for a couple of years!” After a couple of years they did start dating and ended up getting married June 1, 1969. Barb’s mother is Helen Oetken of Madison, SD. Her father is deceased. John was raised in Humboldt and graduated from the Humboldt High School.

Wildcat girls divide home games, 7-2 overall

Humboldt's varsity softball team moved to 7-2 on the season by splitting their two games at home on Saturday (June 7). The Wildcats lost 13-0 to Mason City and defeated Cherokee Washington, 8-3. Humboldt moved to 3-1 in the North Central Conference by beating Eagle Grove, 5-3 Friday night (June 6) in Humboldt. Avery Terwilliger pitched a five-hitter for Humboldt while the Wildcats produced six hits at the plate to back her up. Terwilliger had two hits at bat.BLAST CLEAR LAKE, 19-0Humboldt had no trouble in their conference home game with Clear Lake on Thursday night (June 5), blasting Clear Lake 19-0. Humboldt's 20-hit attack was paced by eight players each with two hits, they include Lauren Friesth, Beth Duffield, Kelsey Peters, Taylor Gidel, Halie George and Maggy Duffield. Peters hit a grand slam homer. Avery Terwilliger and Shelbie Miller combined to pitch three innings.Humboldt had to use extra innings to nip Hampton-Dumont, 8-7 in a varsity softball game at Hampton on June 4.

Wildcat baseball team wins own tournament

Humboldt claimed its own baseball tournament last Saturday (June 7) by winning both games. The Wildcats defeated Central Springs, 12-9, and edged Estherville-Lincoln Central, 4-3. Humboldt is now 8-1 overall on the season.Humboldt posted another North Central Conference baseball victory Friday night by holding off Eagle Grove, 5-2 in Eagle Grove on June 6. Wildcat pitchers Austin Zylstra and Chris Witzke held the Eagles in check on the night. Humboldt is 2-1 in the NCC.Humboldt earned a 9-3 victory at Southeast Valley in Dayton on June 5. A six-run first inning powered HHS in this non-conference game, which saw Humboldt collect nine hits, led by Chris Witzke, Zylstra, Shelgren and Laing each with two hits. Laing had two RBI with a double. Laing earned the win on the mound, working six innings with two strikeouts and four walks. Humboldt got back on the winning track at Hampton on June 4 in posting a 10-5 victory over the Bulldogs in a North Central Conference contest.

Wildcat girls fall in regional soccer opener, 3-2

Webster City scored a pair of goals in the second half to upend Humboldt, 3-2 in a girls' Class 1A Region 3 soccer game in Humboldt Tuesday night (June 3) at Mason Maach Field in Humboldt. Morgan Weydert and Maddie Thomas each had a second half goal for the Wildcats, who end their season with an overall record of 6-5 in only their second year of fielding a team. Webster City will face Clear Lake in a second round game. Clear Lake defied Garner-Hayfield/Ventura in another first round contest.See complete story in the Humboldt Independent Newspaper. COOK OF THE WEEK - RHUBARB RECIPES

Last week I didn’t have time to call or interview anyone for Cook of the Week. This week I called between five and 10 different people and everyone declined to be the Cook of the Week. So this morning when I was picking rhubarb for freezing, I decided, “I know what I will do, I will write about RHUBARB and share some really good rhubarb recipes.” Of course all of my recipe books are gone being cleaned of sooty residue, so I borrowed a few recipe books from a friend and my mouth was watering the whole time I was reading recipes. And I can’t even cook any of these until I’m back in my home and have a kitchen and stove to work with! There are really a lot of different recipes that rhubarb can be used in. Rhubarb is actually a perennial vegetable, though it is usually used as a fruit in desserts and jams. You only eat the stalks, which have a rich tart flavor.
