COOK OF THE WEEK - WATERMELON RECIPES

Summer has definitely arrived with its high humidity and temperatures. There is nothing better on a hot summer day than an ice-cold slice of watermelon. Not having given much thought of the origin of this summer delight, it was astounding to find out that watermelon is over 5,000 years old and is depicted in Egyptian hieroglyphics. Watermelon was even included in the tombs of the Pharaohs to help provide nourishment in the afterlife. This week’s cook column investigates this interesting melon and provides recipes for it. Here are some other fun facts about watermelon: Watermelon is 92 percent water. Watermelons are cousins to cucumbers, pumpkins and squash. Watermelon is the most consumed melon by weight in the United States. Second is cantaloupe and then honeydew. Early explorers used watermelons as canteens. The first cookbook published in the U.S. in 1776 contained a recipe for watermelon rind pickles. China is the number one producer of watermelon.

Humboldt's state tournament bid falls short, 11-10 in regional final

FORT DODGE - Humboldt's state tournament bid came up short Tuesday night in a Class 4A regional softball championship game as Denison-Schleswig denied the Wildcats, 11-10. The loss ends Humboldt's season at 22-10.Lauren Friesth led Humboldt's 10-hit attack by going 4-for-5 with a home run and three RBI. Sarah Peters had two hits and three RBI. Avery Terwilliger pitched all six innings allowing 11 hits, three walks and two strikeouts.See complete story and photos in the Humboldt Independent Newspaper. HHS girls stun No. 1 LeMars, 3-2

Humboldt advanced to within one game of the state softball tournament by upsetting No. 1 ranked and unbeaten LeMars, 3-2 Saturday night (July 13) in LeMars. The victory sent Humboldt into a regional final on Tuesday (July 16) against Denison-Schleswig at Fort Dodge at 7 p.m. Denison-Schleswig defeated Bishop Heelan of Sioux City, 8-7. The regional final was originally slated for LeMars.The Wildcats scored one run on LeMars in the first inning and added two in the second inning for a 3-0 lead. LeMars scored one in each of the sixth and seventh innings, but stranded runners in both innings as Humboldt held off the late rally.The victory improved Humboldt's season record to 22-9.

Wednesday fire destroys buildings at farmstead

What started out as a controlled burn quickly grew out of control Wednesday afternoon, July 10, resulting in the destruction of several buildings on the Robert Peterson farm, 2-1/4 miles north of Rutland on Hawaii Avenue. Peterson was burning garbage on the farm when a spark caught a corn crib on fire. The fire spread to a storage shed, a barn and the garage. Humboldt and Bode fire departments responded to the scene and firefighters where able to extinguish the flames in the garage before they spread to the house. No one was injured in the blaze. Perfect weather, perfect celebration for 150th

Dry, pleasant weather conditions helped make Humboldt’s 4th of July Sesquicentennial celebration a huge success.Large crowds were noted at every event, including an overflow crowd for the Sesquicentennial Parade on the evening of July 4th, followed by a spectacular extravaganza of a fireworks display at the Humboldt County Fairgrounds. Winning floats in the parade included: Hy-Vee in the commercial division, the Humboldt Boy Scouts in the non-profit division, and Virgil Davis with his chicken pulling wagon in the personal division.
