COOK OF THE WEEK - CANNING RECIPES

Canning sounds like a lot of work and sometimes it is, but as the jars seal after they are out of the canner or the hot water bath, you will hear – pop!, then another – pop!, as each jar is sealing. This is the fun part. You know you have gotten a successful seal! If a jar doesn’t seal for some reason you can still use it. Just put it in your refrigerator and use it soon instead of storing it for later use.
This past week my computer was not cooperating with me for a few days so I made use of that time by canning some ripe cucumbers and also making some jelly. The only one I haven’t made yet is the grape jelly, but it will still get done this fall. These jars of jelly make neat little Christmas gifts and the green and red pepper jelly is so pretty at Christmas parties, served in a three-section serving dish with cream cheese, and crackers all around.

HHS cross country teams finish runner-up at Eagle Grove

Humboldt's girl/boy cross country teams both finished second in the Bell Invitational at Eagle Grove on Tuesday (Oct. 4). The Wildcat girls finished with 49 points while Gilbert won with 34. Spencer was third at 64. Bryce Gidel paced Humboldt's girls with a first-place finish in 19:25. Gabby Kent ran third overall for the Wildcats in 20:20. Isabella Luu was sixth in 20:59.

Humboldt's boys totaled 61 points while Gilbert had 25 to take the top spot. Garner-Hayfield/Ventura was third with 73. Ryan Courtney led Humboldt with a fourth-place finish in 17:21. Joe Kunert was seventh in 17:23.

Next action for the Wildcats is the North Central Conference meet in Hampton on Tuesday, Oct. 11.
