COOK OF THE WEEK - FRUITCAKE RECIPES

“Tis the season for lights and presents and fruitcake! Unfortunately the mention of fruitcake brings out jokes and laughter. This week’s cook column is dedicated to the much-maligned dessert and hopefully will provide a recipe that may make even the most skeptical give it a try. The Middle Ages provide the first mention of “fruitcake.” A combination of the Latin fructus, and French frui or frug provides the base for the name. The oldest reference to fruitcake comes from Roman times and a recipe that included pomegranate seeds, pine nuts and raisins that were mixed into barley mash. The Middle Ages saw the addition of honey, spices and preserved fruit. This type of cake was carried by crusaders and hunters to sustain them during long absences from home. When dried fruit was imported from the Mediterranean during the 1400s fruitcake became popular in Britain.

St. Edmond pulls away from Humboldt in 2nd half, 64-43

HUMBOLDT – Fort Dodge St. Edmond pulled away in the second half en route to a 64-43 victory over Humboldt Tuesday night (Dec. 11) in North Central Conference girls basketball in the Wildcat gym.Erica Lane scored 15 points to lead Humboldt and Lauren Friesth was next with seven. April Jones and Kenzie Wright each had five. The Wildcats, who trailed just 24-21 at halftime, couldn't stop the charging Gaels in the second half. Humboldt's record slips to 2-4 overall, 1-4 in the NCC. The Wildcats return to action Friday night when they host Clarion-Goldfield. Wildcats boys in 74-39 breeze past Eagle Grove

HUMBOLDT – Humboldt's boys finally got off to a fast start and never looked back in rolling to a 74-39 victory over the Eagle Grove Eagles Friday night (Dec. 7) in the Wildcat gym. The North Central Conference triumph improved the Wildcats' record to 1-2. HHS is now 2-2 overall.Bryan Larson scored 17 points and Michael Orness hit for 14 to pace Humboldt. Ben Madison added 10. Wildcat girls in 55-37 triumph over Eagles

HUMBOLDT – Humboldt pulled away from Eagle Grove in the second half en route to a 55-37 North Central Conference girls' basketball win over the Eagles Friday night in the Wildcat gym.The Wildcats, now 2-3 overall on the season, 1-3 in NCC action, was led in scoring by Erica Lane with 16 points. Madison Thomas made eight while April Jones, Kinzie Wright and Lauren Friesth each had seven. Beth Mork paced Eagle Grove with 11. Humboldt will host Fort Dodge St. Edmond on Dec. 11. Sumner Avenue Bridge receives program funds

Humboldt City Administrator Aaron Burnett reported late Tuesday morning that the city of Humboldt has qualified for federal and state City Bridge Program funds for replacement of the Sumner Avenue Bridge. Burnett said the funds will be up to $1 million of the expected $2 million project. “This is fantastic news,” the city administrator said. “This is something the city has been waiting a long time to see done.” Burnett said local matching funds will come from the city’s portion of local option sales tax dollars. “The council has been holding back spending a large portion of the LOST dollars with the bridge replacement in mind. In that way, we are hopeful that no bonding will be required to finance the construction,” Burnett said. In 2010, the cost of a prestressed concrete beam bridge or a continuous concrete slab bridge for Sumner Avenue were both in excess of $1.9 million, with a steel girder bridge slightly higher.
